Spicy Salmon Poke
The purest expression of fresh fish. Sashimi-grade salmon cured lightly in a spicy, savory marinade.
Ingredients
- —400g sashimi-grade salmon fillet
- —3 tbsp high-quality soy sauce
- —1 tbsp toasted sesame oil
- —1 tbsp Sriracha or chili oil
- —2 scallions, thinly sliced
- —2 cups seasoned sushi rice
Method

Cut the salmon into perfectly uniform half-inch cubes.

Whisk together soy sauce, sesame oil, and Sriracha in a glass bowl.

Gently fold the salmon and scallions into the marinade. Let sit for exactly 5 minutes.

Serve immediately over warm, seasoned sushi rice.
